Pancakes

This is the recipe I used to use with white flour before I was diagnosed with celiac disease.  It works great just switching out the flour and adding xanthan gum.  My kids can't even taste the difference!  I freeze what we don't eat, and heat them up for a quick breakfast.  I love them with strawberry jam on top!



4 cups featherlight flour
1 teaspoon xanthan gum
4 tablespoons sugar
2 tablespoons plus 2 teaspoons baking powder
1 teaspoon salt
4 beaten eggs
4 cups milk
1/2 cup oil

Mix together dry ingredients.  In a separate bowl mix together the beaten eggs, milk and oil.  Pour wet ingredients into dry ingredients and whisk.  Grill on a hot 375º griddle.

Note:  I pour the amount I'd like on the griddle, then spread it around a little with the back of the spoon.

Tin Foil Dinners

Tin Foil Dinners are a family favorite!  We eat them all year long, cooking them in the oven.


Potatoes, peeled and cut up
Carrots, sliced
1 thick slice of an onion
1 tablespoon butter
salt and pepper
Hamburger patty
Montreal Steak Seasoning

Spray a large piece of heavy-duty aluminum foil with non-stick cooking spray.    (Use foil 3 times the width of the food.)  Place potatoes, carrots, and onion on tin foil.  Salt and pepper them.  Place butter on top.  Place hamburger patty on top.  Sprinkle with Montreal Steak Seasoning.  

Fold sides up creasing foil at edge of food.  Keeping edges together make a 1/2" - 1" fold and crease.  Fold 2 - 3 times - leaving enough room in packet for food expansion and steaming during cooking.  Smooth ends flat, make four small triangle folds on each end from the edge of food to the edge of foil.  Fold ends of foil in using 1/2" folds.

If not using heavy-duty foil, wrap dinner again with another piece of aluminum foil.

Bake in oven at 350º for 1 hour.  You may also cook this in hot coals, for about 1 hour, turning every 15 minutes.

Chicken/Turkey Marinade

1 part soy sauce
2 parts 7-up or Sprite
Horseradish Sauce about 1/2 teaspoon
1/4 teaspoon garlic powder

Mix ingredients together and add meat.  Let it marinate for at least 2 hours, up to overnight.  Grill or bake meat.  If you grill, right before you pull out the meat at 1 tablespoon oil to help it not stick to the grill.

Note:  I usually use 1 cup soy sauce and 2 cups soda, for enough meat to feed a family of seven.

Mint Brownies

These brownies are delicious with the mint frosting and chocolate on top.  It is more of cake-like brownie!


1 cup water
2 cubes butter
6 tablespoons cocoa
2 cups sugar
2 cups featherlight flour
1 1/2 teaspoons xanthan gum
1 teaspoon soda
1 teaspoon salt
1/2 cup buttermilk
2 eggs
1 teaspoon vanilla

Prepare the buttermilk if making homemade.  Bring to a boil the water, butter and cocoa, then take off the heat.  In a medium bowl mix together the sugar, flour, xanthan gum, soda, and salt.  A little at a time add to the cocoa mixture.  Stir - don't beat.  Add the buttermilk, eggs and vanilla.  Mix well.  Spread in a greased and floured jelly roll pan.  Bake at 350º for 25 minutes.

Let brownies cool, then frost.

Frosting:
1 cube butter
3 cups powdered sugar
mint extract (to taste)
green food coloring
milk (to the right consistency)

Melt 1 bag chocolate chips using a double boiler and spread on top of frosting.

Notes:
•  I make my own buttermilk, by putting 1/2 tablespoon vinegar in a 1/2 cup measuring cup.  Then fill the rest with milk.  Let it stand for 5 minutes.

Yummy Gluten Free Pizza Crust & Sauce

I really love this pizza crust recipe because it tastes great and it's really easy.
The pizza sauce recipe is the most incredible pizza sauce I've ever tasted!

2 1/4 teaspoons rapid rise dry yeast
3/4 cup warm water
2 teaspoons brown sugar
2/3 cup white rice flour
1/2 cup tapioca flour
2 teaspoons xanthan gum
1/2 teaspoon salt
1/2 teaspoon baking powder
2 teaspoons olive oil
1 teaspoon cider vinegar

Add the yeast and brown sugar to the water, and stir to dissolve the yeast.  Set aside.  Measure all the dry ingredients and put in a medium size bowl. Add olive oil, vinegar, and yeast water.  Stir with a fork until a ball forms.  The dough will be soft.  Cover with plastic wrap and let rise until about double in size (20 minutes).  Stir down the dough.  Spread dough with hand until very thin, making sure you close up any tears or holes in the dough.  (You may want to flour your hand a little, using either featherlight or sweet rice flour.)

Spread with pizza sauce.  Place mozzarella cheese on top and and toppings of your choice.
Bake at 375º for 15 minutes.


Pizza Sauce

Put these ingredients in a blender and blend:
½ cup celery, sliced
½ cup green onion, chopped
1/3 cup green pepper, chopped
½ teaspoon garlic powder or 2 garlic cloves
¼ cup water

Put 1/4 cup of blended mixture in a large bowl.
Then add:

2 cups canned tomatoes, slightly blended
2 6 oz cans tomato paste
1 tablespoon Italian seasoning
½ teaspoon salt
½ teaspoon pepper
Blend.  

Mix well.  


Note:  I usually double the 2nd half of the recipe.  I add 1/2 cup of the green blended mixture, and double the rest of the ingredients.  (I use a quart of my whole tomatoes, etc.)  It makes a huge batch.  I use what I need and freeze the rest for pizza another day).

Cheesecake Factory Cajun Jambalaya Pasta

This is a quick recipe that tastes and looks like you've been slaving away in the kitchen for hours!  The heat from the Cajun seasoning adds a nice kick!


4 tablespoons butter
2 teaspoons Cajun spice mix
1 lb boneless, skinless chicken breasts, cut into small pieces
1/2 cup clam juice
1/2 of a green pepper, cut into thin strips
1/2 of a red pepper, cut into thin strips
1/2 of a yellow pepper, cut into thin strips
1/2 of a medium red onion, cut into thin strips
1/2 lb fresh medium shrimp, peeled deveined, tails removed
1/2 cup diced tomatoes
16 oz gluten free linguini pasta

Place the butter into a saute pan.  Allow the butter to melt slightly.  Add the seasoning into the pan and stir together with the melted butter.  Add the chicken into the pan and saute the chicken until it's cooked through.  Add the clam juice, peppers and onions.  When the vegetables are almost done, add the shrimp.  Continue to cook until the shrimp is done.  Add the tomatoes.  Continue to cook until tomatoes are heated.  Serve over cooked pasta.

Note:  
  •  I often use cooked shrimp and add it at the end, cooking it only until the shrimp heated through. 
  •  Gluten free spaghetti noodles work well in this recipe too!

Mexican Casserole

This is a quick easy meal that my kids love!




1 lb hamburger
medium onion, diced
1 quart whole tomatoes
4 tablespoons taco seasoning
1 4 oz can diced green chili's
1 1/2 cups frozen corn
1 15 oz can black beans, drained & rinsed
crushed tortilla chips
cheddar cheese, grated

Brown hamburger and onion.  Season with salt and pepper.  Add tomatoes, taco seasoning, green chili's, corn and black beans.  Simmer 4 - 5 minutes.  Spray a 9 x 13 inch casserole pan with cooking spray.  Put layer of crushed tortilla chips in the bottom, then half the meat mixture.  Add a layer of cheese then repeat - chips, meat, cheese.  Bake at 350º for 15 minutes.

Sour Cream Potatoes

I love these potatoes with the homemade cream of chicken soup!  I make this recipe with a lot of give and take.  I don't like it to be runny.  I cook as many potatoes as I need for the number of people I'm serving.  Then I add the cream of chicken and sour cream until it's the right consistency.  Then mix in the cheese.  These are the basic amounts I use, but make it how you like it best.  This is a great recipe to make ahead of time and refrigerate until you're ready to put it in the oven.


8 cups potatoes, peeled 1/2 inch cubes
1 cup cream of chicken (recipe in soup section)
1 cup cheddar cheese, grated
1 cup sour cream

Boil potatoes, until very tender.  Drain.  Add cream of chicken soup, cheddar cheese and sour cream.  Stir together well.  You can smash the potatoes a little if you want it to be really smooth.  Pour into greased casserole dish and heat for 20 minutes at 350º.  Take it out of the oven, and sprinkle grated cheddar cheese on top.

Cream of Chicken Soup

1 medium onion, diced
2 tablespoons butter
2 tablespoons featherlight flour
2 cups milk
3 chicken bouillon cubes (gluten free)

Saute onion in the butter.  Stir in the flour.  Heat it slightly and stir in the milk.  Add the bouillon cubes and stir until thick and the bouillon dissolves.  This soup is very flavorful because of the 3 bouillon cubes.  It works great in sour cream potatoes, chicken enchiladas, etc.  If you don't like it as strong, just add 2 cubes.

Taco Soup

So easy and delicious!

1 lb hamburger
1 medium onion, diced
1 4 oz can diced green chili's
2 quarts whole tomatoes
1 15 oz can black beans, drained & rinsed
1 15 oz can kidney beans, drained & rinsed
1 15 oz can creamed corn
4 tablespoons taco seasoning
2 - 3 teaspoons cumin

cheddar cheese
crushed tortilla chips

Brown hamburger and onion.  Season with salt and pepper.  Add the rest of the ingredients and simmer 5 minutes.  Serve with cheddar cheese and crushed tortilla chips.

Breadsticks

This has to be one of my all time favorite gluten free indulgences!  I LOVE these bread sticks!  When I'm feeling a little down on my diet this is what I make!  My son told me tonight as he was eating the bread sticks that I should open up a gluten free restaurant!  So sweet!  This recipe is adapted from eatingglutenfree.com


3 cups French Bread mix
1/3 cup dry milk powder
1 tablespoon dry yeast
1/2 teaspoon salt

4 egg whites
3 tablespoons oil
1 teaspoon vinegar
1 1/2 cups warm water


Mix flour mix, milk powder, yeast and salt in a medium bowl.  In the bowl of a stand mixer, mix the wet ingredients.  With the mixer on low, slowly add the dry ingredients to the wet ingredients.  Beat on high for 3 1/2 minutes.

Spoon dough into a Ziploc bag then cut the corner off to about a 1/2 inch diameter opening.  Spray 2 cookie sheets with Pam.  Squeeze dough onto the cookie sheet in 5 - 6 inch lines.  You will get about 44 - 46 six inch bread sticks.


Preheat oven to 400º.  Brush bread sticks with melted butter.  Sprinkle garlic powder and Parmesan cheese on top.  Let rise for 20 minutes in a warm place.

Bake for 10 - 15 minutes until golden brown.  Serve immediately.  Store leftovers in the refrigerator.

Notes:
•  In this photo I did some bread sticks with fresh Parmesan and some with the inexpensive can of
      Parmesan cheese.  Both work well.
•  I use non-instant milk powder
•  I use saf - instant yeast.  It dissolves well.

I use this flour blend for my breadsticks.

3 1/2 cups white rice flour
2 1/2 cups tapioca flour
2 tablespoons xanthan gum
2 (7 gram) packets unflavored gelatin
2 tablespoons egg replacer
1/4 cup sugar

Asian Salmon

My sister and I made this over Thanksgiving break.  I usually grill salmon, but because of the snow outside we baked it instead!  Yummy!


Fresh salmon, boned but skin on (about 3 pounds)

Marinade:
   2 tablespoons Dijon mustard
   3 tablespoons La Choy Lite Soy Sauce (any gluten free soy sauce will work)
   6 tablespoons olive oil
   1/2 teaspoon minced garlic
   1 - 2 teaspoons honey

Place salmon, skin side down on a piece of tinfoil.  Drizzle half the marinade onto the salmon and allow it to sit for 10 minutes.  Grill, or place on a baking sheet and bake for 18 - 20 minutes at 400º.  Spoon the reserved marinade on top.  When you serve the salmon, the skin will stick to the tinfoil and the salmon will easily pull away from the skin.  (If you use salmon that has been skinned, just be sure to butter your tinfoil first.)

Snickerdoodles

1 cup butter
1 1/2 cups sugar
2 eggs
2 1/2 cups featherlight flour
1/2 cup gluten free flour
2 teaspoons xanthan gum
1 teaspoon baking soda
1/2 teaspoon baking powder
2 teaspoons cream of tartar
1/4 teaspoon salt

2 tablespoons sugar
2 teaspoons cinnamon

Cream together the butter, sugar and eggs.  Add flours, xanthan gum, soda, baking powder, cream of tartar and salt.  Blend.  Cover and refrigerate for 30 minutes.  In a small bowl, stir together 2 tablespoons sugar and 2 teaspoons cinnamon.  Shape dough into 1 inch balls and roll in cinnamon-sugar.  Place on ungreased baking sheet and bake at 400º for 8 minutes or until bottoms are lightly browned.

Clam Chowder

My aunt Jeanette would make this every Christmas Eve.  I looked forward to it every year!  Instead of using "wheat" flour like she does, I just substitute it with featherlight.  You don't need any xanthan gum.  It thickens just fine.  You don't have to picky about how many vegetables you add.  Just add about 5 - 6 cups.  If you like it chunky add more, if you like it thin add less.


1 cup celery, chopped
1 cup onions, diced
3 cups potatoes, peeled and cubed
1 cup carrots, peeled and sliced
2 cans minced clams
1/2 cup butter
1/2 cup featherlight flour
1 quart half and half
1 ½ teaspoons salt
½ teaspoons sugar
pepper, to taste
2 teaspoons Beau Monde seasoning
2 teaspoons lemon juice
dash GF Worcestershire sauce
Put celery, onion, pototoes and carrots in a large saucepan.  Drain the clam juice into the pan with the vegetables. Set clams aside.  (If you add them now they can become rubbery.)  Add just enough water to cover the vegetables.  Cook until tender, about 20 minutes.  

While vegetables are cooking, make a rue.  In a separate saucepan, melt 1/2 cup butter at medium temperature.  Add the flour and whisk.  Stir for just a bit, heating the flour/butter mixture.  Add half and half.  Stir regularly until it thickens and begins to boil.  Take off the heat.

When vegetables are soft.  Pour the thick cream sauce into the pan with the vegetables.  Stir until combined.  Add salt, sugar, pepper, Beau Monde seasoning, lemon juice, Worcestershire sauce, and clams.  Stir and heat another 4 or 5 minutes.  Eat, or keep warm in a crockpot.

Oatmeal Chocolate Chip Cookies

You're going to love these cookies!  You can't even tell they are gluten free.  It makes a HUGE batch.  I like to bake a few trays, and freeze the rest as cookie dough so I can have fresh baked cookies whenever I want.  You can also easily half the recipe.

1 lb butter
4 eggs
2 cups sugar
2 cups brown sugar
5 cups featherlight flour
2 teaspoons soda
2 teaspoons baking powder
4 teaspoons xanthan gum
1 1/2 teaspoons salt
2 teaspoons vanilla
4 cups gluten free oatmeal
2 12 ounce bags chocolate chips

Mix well the butter, eggs, sugar and brown sugar.  Add flour, soda, baking powder, xanthan gum, salt, and vanilla.  Mix, then add oatmeal.  Stir in chocolate chips.  Bake at 375º for 8 - 9 minutes.

To freeze, just put them on the cookie sheet as if you're going to bake them.  Put them very close together so you can squeeze a lot on the tray.  Then put them in the freezer for a few hours.  Pull them out and put the frozen cookie dough balls into a freezer bag.  When you're ready to cook them, take them out of the freezer and let them defrost for 10 - 15 minutes on the counter, then bake.

Salsa

This salsa recipe is great because it uses bottled tomatoes, but it still tastes fresh because of the cilantro.  It's a thin salsa which works great because my kids won't eat tomatoes, but they eat this right up!

1 onion, quartered
1/3 bunch cilantro
1 inch jalapeno, seeded
2 quarts whole tomatoes (drain most of the juice out)
1/2 teaspoon salt
1/4 teaspoon pepper

Place ingredients in a blender in the order they are listed.  Turn it on high.  As soon as all the ingredients are blending, count to 5 then turn off the blender.  Serve with tortilla chips.

Note:  When I bottle tomatoes, I don't add salt.  If your tomatoes have salt, you may want to use a little less.  Also, if you want it hotter, add more jalapeno!

Tostadas


1 lb ground beef, browned
2 cans refried beans
1 package taco seasoning
8 ounce can tomato sauce
1/2 cup water

Combine in crockpot.  Cook on low for 4 to 6 hours.  Stir occasionally.

Serve on tostada shell with cheese, lettuce, tomatoes, olives, guacamole and sour cream.

Note:  My favorite refried beans are Rosarita Green Chili and Lime

Caramel-Pecan Apple Pie

This is my all time favorite apple pie recipe.  I love the crunch of the pecans, and the flavor that the caramel adds!  I'm also partial to the streusel topping!  Top with vanilla ice cream and you've got a delicious dessert!

7 cups sliced peeled tart apples
1 teaspoon lemon juice
1 teaspoon vanilla
3/4 cup chopped pecans
1/3 cup packed brown sugar
3 tablespoons sugar
4 1/2 teaspoons ground cinnamon
1 tablespoon cornstarch
Caramel ice cream topping, room temperature
1 unbaked pastry shell (9 inches)
3 tablespoons butter, melted

Streusel Topping:
3/4 cup featherlight flour
2/3 cup chopped pecans
1/4 cup sugar
6 tablespoons cold butter
Caramel ice cream topping, room temperature

In a large bowl, toss apples with lemon juice and vanilla.  Combine the pecans, sugars, cinnamon and cornstarch; add to apple mixture and toss to coat.  Pour (2 - 3 tablespoons) caramel topping over the bottom of pastry shell - enough to coat the bottom of the shell.  Top with apple mixture (shell will be full).  Drizzle with butter.

In a small bowl, combine the flour, pecans and sugar.  Cut in butter until mixture resembles coarse crumbs.  Mix with hands.  Sprinkle over filling.

Bake at 350º for 50 - 60 minutes or until filling bubbly and topping is browned.  Immediately drizzle with 3 - 4 tablespoons caramel topping.  Cool on a wire rack.

Banana Cream Pie

Yum!  Yum!  Yum!
This is one of my mother-in-law's famous recipes!


2/3 cup sugar
1/4 cup cornstarch
1/2 teaspoon salt
4 egg yolks, slightly beaten
3 cups milk
2 tablespoons butter
4 teaspoons vanilla
2 bananas
1 baked pie shell

Stir together sugar, cornstarch, and salt in a saucepan.  In a bowl, blend egg yolks and milk.  Pour egg and milk mixture into the sauce pan.  Cook over medium heat, stirring constantly until it boils.  Stir and boil for 1 minute.  Take off the heat and stir in butter and vanilla.  Press plastic wrap up against pudding and cool to room temperature.  Slice 2 bananas into 9 inch baked pie shell.  Pour pudding on top.  Chill 2 hours.  Top with whipped cream.








Bette Hagman's Featherlight Vinegar Pastry

I got this recipe from my cousin!  It is fabulous!


2 ½ cups featherlight flour                                                                                                       
1 rounded teaspoon xanthan gum           
½ teaspoon salt
1 tablespoon sugar
¾ cup shortening
1 tablespoon vinegar
1 egg
4 tablespoons ice water
Sweet rice flour for rolling

Blend the flour mix, zanthan gum, salt, and sugar.  Cut in the shortening until coarse crumbs form. In a small bowl, beat the vinegar and egg together with a fork.  Add the ice water.

Stir the wet ingredients into the dry ingredients with a fork and keep adding liquid until the dough forms a ball. Work a little with your hands to obtain a smooth texture. Cover and refrigerate for 30 minutes or more before rolling out.

Divide the dough in half and roll out on plastic wrap. Use as much of the sweet rice flour as needed to work easily. Place in a pie tin. If using plastic wrap for easier handling, remove it to the pie tin and invert the dough into the pan. Bake as directed for the filling used.

For a baked crust, prick the pastry with a fork on sides and bottom. Bake the crust in a preheated 450º oven for 10-12 minutes or until slightly browned. Cool before filling

Makes enough pastry for a 2-crust 9” pie or 2 pastry shells

Crispy Chicken

1 1/2 cups GF Rice Crispies, or Rice Chex, crushed
2 tablespoons featherlight flour
1/2 teaspoon salt
1/4 teaspoon thyme
1/4 teaspoon poultry seasoning

Combine the above ingredients in shallow bowl.  Melt 1/4 cup butter and put in another shallow bowl.  Dip boneless skinless chicken breasts first in melted butter, then coat with crumbs.  Place in a greased casserole dish.  Drizzle with remaining butter.  Bake uncovered at 400º for 25 minutes, or until juices run clear.

Rachelle's Gluten Free Stuffing

Thanksgiving is delicious with this stuffing!  I've tried gluten free bread in the past and it was okay, but not great.  A few years ago I decided to use my waffles instead!  It truly was scrumptious!  I just make a big batch of waffles so I have plenty of leftovers for the stuffing.  This recipe serves about 8 to 10 people, so if you're serving more than that, you might want to double it.


5 cups GF waffles, toasted and cut in small cubes
4 cups celery, diced (about 7 celery ribs)
2 cups onion, diced
1/2 cup butter
1 cup water
2 cubes chicken bouillon
1 teaspoon poultry seasoning
salt and pepper to taste

In a small pan, bring the bouillon and water to a boil, then remove from heat.  In a separate pan, saute celery, onion and butter until soft.  Add waffles, chicken broth and poultry seasoning.  Add salt and pepper to taste.  Bake in a greased casserole dish for 20 - 25 minutes at 350 degrees until heated through.

Note:  I have a large Belgium waffle iron.  This recipe uses about 8 or 9 waffle quarters.

Raspberry Lemonade


2 cans (12 ounces each) frozen lemonade concentrate, thawed 
2 packages (10 ounces each) frozen raspberries, partially thawed
4 tablespoons sugar
2 liters Sprite
Ice cubes

In a blender, combine lemonade concentrate, raspberries and sugar.  Cover and process until blended. Strain to remove seeds.  In a 4-1/2-qt. container, combine raspberry mixture, Sprite and ice cubes.  Serve immediately.

Pumpkin Chocolate Chip Cookies


4 1/2 cups gluten free flour
1 1/2 teaspoons xanthan gum
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons Egg Replacer
1 teaspoon pumpkin pie spice
1 teaspoon cinnamon
1 cup butter or margarine
2 cups brown sugar
1/2 cup sugar
4 eggs
1 15 ounce can pumpkin
1/2 cup sour cream
1 teaspoon vanilla
1 12 ounce package chocolate chips

In medium bowl, combine dry ingredients and set aside.

In a mixing bowl cream together the butter, brown sugar and sugar.  Beat in the eggs one at a time.  Then gradually add the pumpkin, vanilla and sour cream.  Gradually add the dry ingredients.  Stir in chocolate chips.  Drop by spoonful onto greased cookie sheet.  Bake at 350º for 13 - 15 minutes.

Curry

This is one of my favorite recipes!  I love aroma in my kitchen when I make this!  You first make the basic curry roux.  Then you add veggies and meat, tailored to your liking.

3 cups water
2 chicken bouillon cubes
2 onions
2 tablespoons butter
2 teaspoons garlic, minced
2 teaspoons fresh ginger, grated
1 apple, peeled and shredded
1 tablespoon curry powder
2 tablespoons featherlight flour
1/2 teaspoon garam masala

2 cups chicken, cooked bite sized pieces
1 1/2 cups carrots, sliced
2 cups potatoes, 1/2 inch cubes
8 ounces mushrooms, sliced
1/2 teaspoon salt

Heat bouillon in water to make broth, and set aside.  Saute onions and butter in a pan, until onions start to turn brown.  Add garlic, ginger, and apple in the pan and saute 2 or 3 minutes.  Add flour and curry powder and saute over low heat until flour is heated through.  Gradually add the broth to the onions, stirring constantly.  Simmer for a few minutes until thickened, then add the garam masala.  Add vegetables and meat.  On medium heat simmer until vegetables are tender.  Serve over rice.

Note:  I keep my ginger in the freezer.  When I need it, I pull it out and peel and grate what I need.
           I like McCormick's Curry Powder the best.

German Pancakes


This is one of my kids favorite breakfasts!  I bake 2 pans at a time, so there is enough.  You can cut 12 pancake squares from a 9 x 13 inch pan.


6 eggs
1 cup featherlight flour
1/2 teaspoon xanthan gum
1/3 cup sugar
1/2 teaspoon salt
1 cup milk
1 teaspoon vanilla

Preheat oven to 375º.  Melt 2 to 3 tablespoons of butter in a 9 x 13 inch pan while the oven is preheating.  Take pan out of the oven before the butter begins to brown.  Put all ingredients into a bowl and mix until it is combined.  Pour egg mixture into the buttery pan.  Bake for 15 minutes.  Cut into squares and serve with maple syrup.

White Chili


1 large onion, diced
2 garlic cloves, minced
1 tablespoon olive oil
3 cups cooked chicken
2 cans white beans, rinsed & drained
7 cups water
6 chicken bouillon cubes
1 can green chili's, diced
2 teaspoons cumin
1/2 teaspoon pepper
1 1/2 teaspoon oregano
2 to 3 tablespoons cilantro, chopped
tortilla chips
shredded cheese

Saute onion and garlic in olive oil.  Add chicken, beans, water, bouillon, green chili's, cumin, pepper and oregano.  Simmer 15 - 20 minutes.  Before serving stir in cilantro.  Serve with crushed tortilla chips and shredded cheese.

Pumpkin Cake Roll

I love this dessert!  It has Fall written all over it!  (Although it's great any time of year!)


3/4 cup featherlight flour
1/2 teaspoon xanthan gum
1 teaspoon baking powder
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt
3 eggs
1 cup sugar
2/3 cup pumpkin
1 teaspoon lemon juice
1 cup finely chopped nuts

Mix together dry ingredients (except sugar) and set aside.  Beat eggs 5 minutes or until very thick.  Gradually beat in 1 cup sugar.  Stir in pumpkin and lemon juice.  Fold in dry ingredients.  Pour into well greased and floured 15 x 10" baking pan.  Sprinkle top with finely chopped nuts.  Bake at 375º for 15 minutes.  Loosen edges and turn out immediately onto dish towel that has been sprinkled with powdered sugar.  Start at narrow end and roll towel and cake together.  Cool completely and unroll.  Frost with Cream Cheese Frosting.  Roll and chill before serving.


Cream Cheese Frosting

4 tablespoons butter
6 ounces cream cheese
1 cup powdered sugar
1/2 teaspoon vanilla

Cheesecake

This is one of my all time favorite desserts!  Indulge!

1 1/2 cups crushed GF cookies
4 tablespoons melted butter
4 (8-oz) packages cream cheese, softened
1 cup sugar
3 tablespoons Featherlight flour
4 eggs
1 cup sour cream
1 tablespoon vanilla

Preheat oven to 325º.  Put the crushed cookies (any kind works) into a spring form pan.  Pour the melted butter on top and mix around.  Press the crust into the bottom of the pan.  Bake for 9 - 10 minutes.

Preheat oven to 450º.  Mix together the cream cheese, sugar and flour, until smooth.  Add the eggs one at a time, mixing well after each one.  And sour cream and vanilla.  Mix.  Pour onto the crust and bake for 10 minutes.  Turn down the temperature of the oven to 250º.  Bake for 1 hour.  Cool and serve with your favorite topping.

Note:  I like to smash up berries and sweeten them with powdered sugar for the topping.
          My husband and I really like the cheesecake served the next day after being refrigerated overnight.

Jewell Salad

This is another of my Grandma's favorite recipes.  My son requested it today to go with his birthday dinner!  It's looks cool and is very tasty!


1 (3-oz) pkg Strawberry Jello
1 (3-oz) pkg Lime Jello
1 (3-oz) pkg Orange Jello
1 (3-oz) pkg Lemon Jello
1 half pint whipping cream

Prepare 3 bread pans by lining each pan with plastic wrap.  Make Strawberry Jello, Lime Jello and Orange Jello according to directions, except use 1/4 cup less water in each.  Pour into bread pans and let set until firm.


A few hours later, make the Lemon Jello according to the package directions.  Let it set in the refrigerator until it starts to thicken, then beat until thoroughly mixed.  In a separate bowl whip whipping cream until stiff peak.  Add whipping cream to Lemon Jello and beat until thoroughly mixed.

Cut first three pans of Jello in inch squares and place in a large bowl.  (I like using the plastic wrap because I don't have to wash the bread pans!)  Add Lemon Jello and cream mixture and stir only until mixed.  Pour in a 9 x 13 glass baking dish.  Refrigerate until set.

Swedish Pancakes

My Grandma got this recipe from a Swedish woman.  It was always a family favorite in my home growing up.  I've since adapted it to make it gluten free, and it's delicious!  We eat Swedish Pancakes all year long, but it's also the favored Christmas morning breakfast dish!

2013 update:
I make these crepes all the time, but this morning I learned something new about them.  I was trying to be ultra prepared and measured out the ingredients ahead of time.  I put the xanthan gum with the flour and mixed it up prior to adding it to the egg mixture.  BIG MISTAKE!  Because of the nature of xanthan gum, the more you mix it, the thicker it gets.  With this recipe it makes it way too thick.  So the bottom line is:  Add the xanthan gum after you've added the milks, sugar, salt and flour.  Mix it a little, then add the water.  If you do that, they will turn out perfect!





8 eggs
1 cup milk
1 can evaporated milk
1/3 cup sugar
1/3 teaspoon salt
3 cups featherlight flour
1 1/2 teaspoons xanthan gum
1 cup water


Beat eggs completely.  Keep the mixer going on a slow speed the entire time you're adding ingredients.  (I use a Bosch and keep it on a 1.) Beating constantly add milk, evaporated milk, sugar, and salt.  Add flour.  Then add xanthan gum.  Add 1 cup water.  Turn off mixer and pour the batter into a large pitcher to make it easier to pour each pancake into the pan.  Cook on hot, buttered griddle or in frying pan, spreading thinly over surface to make a large, thin pancake.  You may need to play with the temperature that you cook it on.  I cook it at about medium high.  Serve with butter and maple syrup.

I also love Swedish Pancakes as a dessert with fresh berries and whipped cream or ice cream!


Bette Hagman's GF Flour

I use this flour blend for my white bread recipe.

6 cups rice flour
2 cups potato starch flour (not potato flour)
1 cup tapioca starch

Bette Hagman's Featherlight Flour

This is my all time favorite gluten free flour blend!  It works for almost every recipe!

1 cup rice flour
1 cup cornstarch
1 cup tapioca starch
1 Tbsp potato flour (not potato starch flour)

Rachelle's Spaghetti Sauce

1 lb hamburger
1 medium onion, diced
1/4 teas garlic powder
1 quart whole tomatoes
2 8 oz cans tomato sauce
1 - 2 Tbsp oregano
1 - 2 Tbsp basil
1/2 teas garlic powder
1 teas vinegar
1 T sugar
1/2 teas salt
1/8 teas pepper
2 T corn starch
2 T water

Brown hamburger, & onion.  Season with garlic powder and salt & pepper.  Drain and return to saucepan. Add the rest of the ingredients.  Simmer 5 minutes.  In a separate bowl combine corn starch and water.  Gradually add it to the sauce to thicken.  Simmer another 5 minutes.  Serve over brown rice noodles and top with Parmesan cheese.

Note:  I make this recipe to taste.  I keep adding ingredients until it tastes "right."  This is my basic recipe, but tweak it until you like it!  I like it best with fresh garlic and fresh Parmesan cheese.

Sweet and Sour Chicken

This recipe is one of my Grandma Carlson's recipes.  She was one of the best cooks ever!

1/2 to 1 cup water
5 Tbsp cornstarch
3/4 cup brown sugar, firmly packed
1 tsp salt
1 (20 oz) can pineapple chunks, drained (keep juice)
2 cups chicken (cooked, bite sized pieces)
2 Tbsp GF soy sauce
1/4 cup white vinegar
1/2 cup sliced or diced onions
1 green pepper, chopped
2 tomatoes, chopped

Drain pineapple, reserving the juice in a separate bowl.  In a saucepan combine water, cornstarch, brown sugar and salt. Stir until mixture is smooth.  Add the pineapple juice to the saucepan.  Cook over medium heat about 5 to 7 minutes, until mixture starts to thicken.  Add chicken, soy sauce, and vinegar.  Cover and simmer 15 minutes, stirring occasionally.  Add pineapple chunks, onions, and green peppers to chicken mixture.  Cook until vegetables are slightly tender.  Just before serving, stir in chopped tomato.  Serve over hot cooked rice.

Notes:
•  I like 1 cup water.  It makes the sauce not quite so strong.
•  I like to cut up the pineapple chunks.  You can also use tidbits.

Mexican Chicken Corn Chowder

I adapted this recipe from a Taste of Home Magazine.  I took it to a Halloween party and the pot was licked clean!  This recipe fills a crockpot.  You could half the recipe easily if that's too much.  Enjoy!

12 chicken tenders or 3 chicken breasts
1 cup diced onion
3 garlic cloves, minced
3 Tbsp butter
4 chicken bouillon cubes
2 cups hot water
2 tsp ground cumin
1 qt half and half cream
4 cups shredded Monterey Jack cheese
2 cans (16 oz) cream-style corn
2 cans (4 oz) chopped green chilies, undrained
2 dashes hot pepper sauce
2 medium tomatoes, chopped
1/4 bunch cilantro, chopped

Cut chicken into bite-size pieces.  Brown chicken (seasoning it with a little salt and pepper), onion and garlic in butter until chicken is no longer pink.  Dissolve the bouillon in hot water.  Add to pan along with cumin; bring to a boil.  Reduce heat; cover and simmer for 5 minutes.  Add cream, cheese, corn, chilies and hot pepper sauce.  Cook and stir over low heat until the cheese is melted and soup is heated through.  Stir in tomato and cilantro.  Serve immediately.

Note:  You can keep the soup warm in a crockpot for a few hours if you'd like.  Just wait and add the tomato and cilantro until you're ready to serve.

Brownies with Marshmallows

I got this recipe from my mother-in-law.  It's a family favorite!  I just adapted it to make it gluten free.  I like the featherlight flour, but I'm sure any GF flour would work great.  My husband's coworkers are always nominating him to bring these brownies for work potlucks!  They're always a huge hit!


4 cubes butter
1/2 cup cocoa
3 1/2 cups Featherlight flour
3 1/2 cups sugar
2 teaspoons xanthan gum
1/4 teas salt
8 eggs
Mini marshmallows

Bring to a boil the butter and cocoa in a saucepan.  Take off the heat and let it sit for a few minutes.  Add GF flour, sugar, xanthan gum, salt and eggs.  Stir until smooth.  Bake in an 18 x 12 x 1 inch baking sheet at 375º for 20 minutes.  Cover the brownies with miniature marshmallows.  Put it back in the oven for a couple minutes to puff up the marshmallows.  Take out of the oven and let cool completely.  Top with chocolate frosting.  (The recipe below is the exact amount of frosting you'll need to cover the baking sheet.)

Chocolate Frosting
1/4 cup butter
3 cups powdered sugar
1/4 cup cocoa
milk

Beat butter, powdered sugar, and cocoa together, adding milk until it's the right consistency.

Chunky Mushroom Crockpot Chili

1 lb hamburger
1 large onion, diced
1 green or red pepper, chopped
3 cloves garlic, minced
1 quart whole tomatoes
15 oz can kidney beans, rinsed
15 oz can black beans, rinsed
8 oz mushrooms, sliced
1 cup Pace Picante Sauce (salsa)
2 8 oz cans tomato sauce
2 Tbsp chili powder
2 teas cumin
1 1/4 teas salt
3/4 teas oregano

Brown hamburger, onion, pepper, and garlic, with some salt and pepper.  Drain and pour into a crockpot.  Add the remaining ingredients to the crockpot.  Cook on low for 4 - 6 hours.

BBQ Chicken & Rice

This is hardly even a recipe because it's so easy!  My kids love it and it's a great no-brainer!


Chicken Tenders
Sweet Baby Ray's Honey Barbeque Sauce (yes, it's gluten free!)
Rice

Place chicken in a greased baking dish.  Generously pour barbeque sauce all over the chicken and bake!  Bake @ 375º for 20 - 25 minutes.  Serve over rice.

Chicken Pasta with Fajita Sauce


12 oz brown rice macaroni noodles
2 boneless skinless chicken breasts, cubed
1 small onion, diced
6 -7 tomatoes, cubed
1 pkg McCormick Chicken Taco Seasoning Mix
2/3 cup water
1 Tbsp olive oil
1/2 tsp garlic salt
3 Tbsp Italian Dressing
Parmesan Cheese

Boil noodles until tender.  Meanwhile, saute chicken & onion in nonstick pan.  Add tomatoes, chicken taco seasoning, and water.  Simmer 5 - 6 minutes.  Add olive oil, garlic salt and Italian dressing.  Simmer 1 - 2 minutes.  Drain noodles and add to chicken tomato mixture.  Mix together.  Sprinkle with 3 or 4 Tbsp Parmesan cheese.  Serve.

Robin's Chocolate Chip Cookies


These chocolate chip cookies are my go-to treat!  Nobody can tell they are gluten free!  Everyone gobbles them up!  This recipe makes a giant batch!  I will often bake about half the batch and refrigerate or freeze the rest.
If you choose to freeze them, using a spoon or your hands, drop the dough onto ungreased cookie sheet and space them close together.  Put in the freezer and as soon as they are frozen, take them off the pan and put into a freezer bag.
For my non-gluten free friends:  You can make this recipe with your regular flour, just omit the xanthan gum.



1 1/2 cups sugar
2 cups brown sugar
2 cups butter
3 eggs
2 Tablespoons vanilla
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1 Tablespoon xanthan gum
6 cups featherlight flour
2 12 oz bags milk chocolate chips

Preheat oven to 375º.  Cream together sugar, brown sugar, butter.  Add eggs and vanilla and mix until combined.  Add baking soda, salt, xanthan gum, and featherlight flour.  Mix.  If the dough is too wet to grab with your hands, add more flour.  Sometimes I add anywhere from 1/4 cup to 3/4 cup, depending on how wet the dough is.

Stir in chocolate chips.

I use my hands or a large spoon to drop the dough onto a greased cookie sheet.  Don't roll them into a ball!  (They cook weird if you do.)

Bake @ 375 degrees for 8 minutes.

Waffles

These waffles are incredible!  They are super light and fluffy!  I especially love them cooked in my Belgium waffle iron.  I love to freeze them and then heat them in the toaster when I'm in a rush.  I love them with strawberry jam on top!



























4 cups featherlight flour
1 tsp xanthan gum
1 tsp salt
1 T sugar
2 T baking powder
6 eggs (separated)
½ cup canola oil
1/2 cup applesauce
3 1/2 cups milk

Combine dry ingredients in a large bowl.

Separate eggs in 2 other bowls; whites in one bowl, and yolks in the other.  Put about 1/2 cup oil into a 1 cup measuring cup.  Spoon applesauce into the oil until it fills the cup.  Add it to the egg yolks. Add milk also into the yolks and stir until combined.

Pour wet ingredients into dry ingredients and whisk. (The mixture will seem runny at first, but as it’s mixed the xanthan gum will start to thicken it fairly quickly.)

Beat egg whites with a mixer until stiff peaks form and fold into batter.

 Cook in hot waffle iron.  Makes 28 - 32 Belgium waffles.
