White Chili


1 large onion, diced
2 garlic cloves, minced
1 tablespoon olive oil
3 cups cooked chicken
2 cans white beans, rinsed & drained
7 cups water
6 chicken bouillon cubes
1 can green chili's, diced
2 teaspoons cumin
1/2 teaspoon pepper
1 1/2 teaspoon oregano
2 to 3 tablespoons cilantro, chopped
tortilla chips
shredded cheese

Saute onion and garlic in olive oil.  Add chicken, beans, water, bouillon, green chili's, cumin, pepper and oregano.  Simmer 15 - 20 minutes.  Before serving stir in cilantro.  Serve with crushed tortilla chips and shredded cheese.
